Born and raised in the Val de Bagnes, deep in the Swiss canton of Valais, Eddy Baillifard is one of the world's foremost authorities on raclette. Known across Switzerland and beyond as the "Pape de la Raclette" the Pope of Raclette Eddy carries a craft that runs in his blood: his grandfather was the very first cheesemaker in Bruson, laying the foundations of a family legacy that Eddy has taken to a global stage.
A trained cheesemaker and the official ambassador of Raclette du Valais AOP, Eddy has spent decades mastering and sharing the ancestral art of scraping. He has represented Swiss raclette tradition at some of the world's most prestigious events: the 2015 World Expo in Milan, the 2016 UEFA European Championship in Paris, and the 2018 Winter Olympic Games in Pyeongchang, South Korea. Where others see a simple melted cheese dish, Eddy sees a living cultural heritage one worth defending, celebrating, and sharing with the world.
